FalconFN
I have a vacuum sealer from Lidl, it works pretty well especially for smoked mackerel and pigeon breasts. I only really use it for things that will be frozen for some time as the rolls of bagging plastic are quite pricey, I use cling film for meat that's only in for a short time as it won't usually get freezer burn in a few weeks. JMart
I'd bag everything. We buy freezer bags from the wholesalers like Scoobies Direct for about £25 per 1000
SakoQuad
It's a good idea to make sure it's wrapped well if it's going to be there for more than a few days or it will be "freezer burned" which spoils look and flavour. I wrap rabbits in a couple of turns of cling film then put them into a plastic freezer bag. The cling film helps to stop bones poking through the plastic bag. Get as much air out of the bag as possible before sealing, as its the contact with air at -18C that causes the freezer burn to happen. Pigeon breasts can just be stored in freezer bags as no bones to poke through plastic, get as much air out though before sealing the bag. Freezer bags sold by all supermarkets are thicker plastic than sandwich bags to reduce the chance of things poking through and letting air in. Don't know about everyone else but my habit of not labelling the bags means we often have a "surprise" for dinner as lots of stuff looks remarkably similarafter a week or two in the chaos of our chest freezer - until it's defrosted!
