Try removing the fillets taking the sinew off, press in a mixture of seasalt, pepper and fresh chopped rosemary then quick quick in the pan serving slightly rare :)

Or anything normally done with venison as the two are quite similar (yes I know all types of vension are very different) to me Hare is small deer as regards cooking and they eat about the same things as deer
