spandit
Someone had mentioned using a carpet blade in a Stanley knife for paunching rabbits but they're a bit bulky. Stumbled across this in Sears whilst in Florida recently (no doubt you can get them over here anyway): The blade can be easily changed without tools, and it's so compact and light, you hardly know you're carrying it. Anyway, starting the cut is a little fiddly and you have to be very careful not to nick the guts but otherwise, it's as easy as unzipping... um... a zip. Paunched 5 tonight and blade remained sharp throughout. The knife is stainless so I can dishwasher it anyway but for about £3 I can't complain
figgy
The handles are alloy and the dishwasher really makes a mess off the anodized finish. Still a usable knife but won't keep its looks after dishwasher. I bought a load years ago from Costco, slightly different back shape straight not as curved as yours. Still using the same ones after seven years. Figgy
Scully
Stanley make one similar, about 4"long but a bit heavier. All the blades are replaceable at the flick of a catch. Good knives.
spandit
There are plenty out there. There's a good one with a finger hole that would give a bit more purchase if slippery
