malkiserow
I took a punt on an auction cockerel and bought a long leg (plucked but that is all) I don't know when it was killed but seems very fresh and superb condition. Anyone know how long to leave these as they are before prep. Can I dress the bird on Christmas eve or should I do it now? rich1985
I hang my Xmas cockerels for up to 10 days at about 4degrees. If you havnt got the fridge facility's hang it some where cool and look at it twice a day, when the birds starts to condensate dress it, while it stays nice and dry leave it hanging. Of course if the very edges of the vent show any tinges of green dress it.
