Mungler Posted May 14, 2007 Report Share Posted May 14, 2007 Okay, off topic and all that, but last Friday I bought a load of lambs kidneys from a butcher local to where I work (not my normal Butcher). The kidneys were in the fridge from purchase (maybe 3 whole days at best) and I just went to cook them up and they are well off. How long would you expect kidneys to last in the fridge? The missus reckons offal should be cooked imediately or frozen on the day of purchase. I didn't think 3 days was outrageous. Quote Link to comment Share on other sites More sharing options...

I happened to be speaking to a refridgeration engineer a few weeks ago, and he told me most modern larders now operate at higher temperature than older ones as with all the preservatives now in food products it is considered you do not need to keeep things as cold, and it also helps the manufacturers meet the energy saving target grading for their products. As strange as it may seem I think there is some sense in what he told me.
