"im mainly .........."...talking food

i have eaten all over the world ...from steaks in florida...to sugar cane rats in Zambia...........my anus has dealt with some atrousious "weather"

as im on my own now since my mrs popped her cloggs last year after 40 years of marrige...i sort of please myself......i spend a fair ammount of time on cooking websites....and over the years i have slowly changed the way i cook..........let me explain....

all these recieps online are written by desperate people trying to make money...they take an old simple receipt....then totally change it by adding loads of totally irrelevent spices and herbs....then go blah blah blah ...bull excrement....."this is my signiture dish"........so what you end up with is something that is so arty farty and complicated to cook and find the herbs and essences for it.....frankley you end up with rubbish ...that no self respecting bottom would enjoy passing..

about 5 mths ago i fancied doing Boston baked beans,,went online....about 20 different reciepes..so i chose one....put it all together with all the bloody herbs and spices.........it was bloody disgusting threw the sod away...........then a couple of weeks later i sat down and made a list of what an american lady/homemaker would have access to in the late 1800's....so i put it together........................AND BLOODY WOOOW.....it was top banana....i could taste all the few ingredients...............

so thats how i cook now...........i make very simple chili-con-carne using very few herbs and i use goat meat.........let me explain............in ole mexico the poor grunt farmers raise a bit of beef had a few chickens and a load of goats........their big earner was taking the 2 or 3 beef steers to market,,...there is no way they would have eaten them...so goat and chicken was their protien..........so thats what i use and LOTS  of beans and onions and fresh chili and dried chili.....cook it the day before.......tastes nothing like the reciepes online...it tastes like the real deal

Today i have done the same with a really cheap hotpot dish.....you really need to see the bloody stupid reciepes for hot pot online...and everyone is different.............

i am using cheap mince plenty of oinion oxo cube and thinly sliced leek with sliced raw spuds...then make it up like a lasagne   cover with foil cook for and hour at 180-200..after 45 mins remove foil and brown the top

serve with steamed sweetheart finely sliced cabbage with a big knob of butter ontop..........

will post up the the the results tomorrow

I like cooking the same way as you do.  Simple local food, and depending on what you feel like add fresh veg, whatever is in season, herbs, tomato, maybe some chilli, stock cubes, seasoning and cook slowly in the bottom oven for ages.  Usually leave until the next day before eating so all the flavours infuse.

Sometimes with chicken or pork, occasionally beef and sometimes just veg based and then grill meat to add a you wish.

Anything left over is frozen and a quick meal for another day or a basis for a pasta dish, spuds or whatever.

Wholesome home cooking.

i think alot of the woes in this world would dissapear if the children that are causing the problem now ....were brought up on good wholesome cooking....which would feed the bodies and feed the brain....and be aware that it comes from "their" HOME.......
