Cranners i have to say it but your wrong ol chap ! You hang all meat not just game . The reason you hang meat is so that ... the meat can age which inturn makes the meat more tender by breaking down some of the muscle fibers .

I agree with you that hanging does indeed center the flavour of the meat somewhat .

Sorry, I thought the question was about "game", not meat.

 

The hanging process makes the flavour stronger, by breaking down the meat fibres.

Some could decribe it as the meat "rotting".

I have seen hares hung in a muslin sack, with the maggots dropping onto a tray underneath. :huh:

 

A pheasant eaten the same day, should not be tough, unless its an old bird.

However, The flesh flavour would not be as strong as that of a hung bird.

Some people don't like their meat/game too strongly flavoured.
