sweepy Posted May 3, 2008 Author Report Share Posted May 3, 2008 Cheers for that Henry I was only going to use 25%pork belly but think I will up the percentage,I have a game seasoning mix to add in with the rusk and luckly enough my brother is helping and as he was a butcher for many years(in a local butchers that won awards for there sausages). They were just right moisture wise but I don't like Rabbit I can't really say if they were nice or not for that reason, but the texture was good!
