Rabbit Sausages

Has anybody out there tried making rabbit sausages if so what did they come out like ans am going to make a batch tomorrow.

Theres a farmers market in Durham and the guy sells all types of sausage

including rabbit, :good: theyre a bit dry if you overcook them must be the lack

of fat content :good:

Cheers for that Henry I was only going to use 25%pork belly but think I will up the percentage,I have a game seasoning mix to add in with the rusk and luckly enough my brother is helping and as he was a butcher for many years(in a local butchers that won awards for there sausages).

Also do they come up nice if made into burgers?

well we made a 20lb batch of rabbit sausages and I must say that I was very happy with the result and they tasted just great.

Mrs Sweepy ain't to happy with the state we left her kitchen in,may have to do some serious grovelling :yes:
