henry d
It freezes well, but don`t leave it in there for more than 3-4 months as it dries out(freezer burn !) What kind of smoker are you thinking about ?

staglioni
i tried the flat smoker like a oven dish shape it was pretty good but now i'e got one thats like a bin shape its great. you hang your fish in it so you get a better even flavour, i would go for the bin shape about £35 :yp:

henry d
Nice one JJ, I saw the same one last time I visited and it looks like a very close copy of the American"Webber style" smoker/BBQ.
tiercel
There is a beauty on fleabay at the moment. can be used for hot or cold smoking. And by the looks of it would not be that hard to make for someone with the right tools. Item # 200224558686 TC
JJaxeman
Here is one I have had a go at after the smoking side of things (2-3 hours smoking) You will need to smoke the trout for about 2 hour to get that great smoke flavor into it. Blend it with the remaining ingredients and you'll have a great dip. Prep Time: 20 minutes Ingredients: 1 pound smoked trout fillets 1/2 cup sliced celery 1/3 cup sliced green onions 1/3 cup ricotta cheese 1/4 cup cream cheese 1 tablespoon margarine or butter 1 tablespoon fresh lemon juice 1 teaspoon Worcestershire sauce 1/2 teaspoon hot sauce Preparation: Combine smoked trout (broken into small pieces) with other ingredients in a food processor and blend until smooth. Serve chilled with crackers. Great sandwich filler/roll Edited June 2, 2008 by JJaxeman
