Nial Posted October 25, 2008 Report Share Posted October 25, 2008 (edited) This is very quick to make, there's no faffing about letting things rise etc. It's also very tasty warm with butter melted on it and goes well with most things. For one medium sized loaf you just need 5 ingredients.... 7 oz plain white flour 7 oz wholemeal flour (I normally use Hovis flour) 1-2 oz sugar (to taste) 1 large teaspoon baking soda Butter milk. In Northern Ireland buttermilk is available as a milk like liquid, in Scotland and I presume the rest of the UK you can get it in yougurt like 284ml cartons in Tescos etc. I use just short of two of the cartons. Stick oven on at 160 deg. Put all the dry ingredients in a big bowl and mix. Add the buttermilk mixing as you go. The consistency you're looking for is hard to describe, you don't want it runny, but you don't want it too dry. Slightly drier than the consistency of cement is about right. Put the mix in a greased loaf baking tin and stick it in the oven. Wait 90 odd minutes and it's done. My Mum only cooks hers for an hour but I think that leaves it too moist in the middle, after a couple of tries you'll get the hang of how you like it. It only takes 5 mins to get in the oven and washed up, when you've a couple of bags of flour in you only need to get the buttermilk every time and you're away. I'm making some tomorrow, I'll add pictures if I remember.
