Blunderbuss
That does sound good, got a brace hanging, might give it go at the weekend. And I did! God it was good! Me and the son polished off the whole lot (meant for four) with rosti potatoes, sprouts and cabbage, whilst my veggie missus had to make do with a bean casserole. I enjoyed this so much I might do it for Christmas dinner for a change from turkey

Blunderbuss
If I do it again, I might modify it a bit by stuffing the breasts with some pate and stilton

stuey
Well whoever first suggested it, the final dish turned out bloody lovely. The wife though it was top notch, and can't wait for me to cook this again. Result. Stu

webber
The soup dragon made it for me a few days ago; it was very good, but rather sweet for me. I'll request another effort, but without the caster sugar. webber
henry d
Another variation I would suggest is to add thinly sliced apple and celery to the shallots and carry on as described and then when finishing the sauce add a heaped tbspn of finely chopped walnuts, Waldorf pheasant
