njc110381
I had that happen to me when it hit the hot frying pan once. I'd shot it, gutted and skinned it perhaps 15 minutes before. Got it home and quatered it, lobbed it in the pot and one of the rear sections damn near jumped back out again! Like yourself I was more than a little shocked! chrispti
Nothing more than the remaining electrical signals from the brain. That rabbit will have not suffered in the slightest if it was a headshot. Even though its been head shot, still worth breaking the neck

Carbonrocket
I gutted a rabbit a few weeks ago and its muscles were twitching as I was pulling the heart and lungs out 15-20 mins after the kill. Its fur and head were already removed. Tasted nice!
