Hanging wildfowl

Hi,

I know this topic may have been discussed in the past but I could not find anything in the search box.

I understand that shot game is hung for a few days or even longer to allow the meat to mature but is this the same for wildfowl ? do you hang duck by the neck or feet ? Stupid question I know, but I did hear that duck should be hung this way,

Hi

In my general opinion ive always hung wildfowl by the legs and not by the neck, it gives the bird chance to drain out its

neck track of any water, i read this years ago in a cook book, and at the moment i dont leave them more than a day still

some very hot days around at the moment, and i give the birds a good 15inch apart to cool down.

At this time of year I would be inclined to process wildfowl on the day they were shot especially if any of the intestines are punctured. It is surprising how soon putrification can set in during warm mild weather, whereas during spells of cold frosty weather the same bird could be hung outdoors for a week or more without coming to harm.

I don't do much Wildfowl but always hang from the legs, head down, same with the Game Birds and Deer.

 

Always seemed the logical thing to do and does allow a bit of whatever to drain out.

 

I never hang anything long, and watch where/how you hang it at the moment, those flies still turn up remarkably quickly!
