Hunting tree rats so much fun!

 

They certainly are, now skin it and get it in the pot. Simmer with some stock veg and water (or wine/stock) for an hour or so, remove squirrel and let it cool a bit, peel off all the meat (it will come off easily) and pop it back in the pot with the veg, season to taste and you have a basic version of Mr's Colster's squirrel soup. Delicious.
