Ferret Master
Hitting them on the head I would guess. Hold them in a rag for grip.

Cranfield
A sharp tap on the head normally kills them, but only if you want to eat them. There is a shortage of eels in many parts of the country, due to disease and poor breeding returns. Whilst they can be a nuisance in some fisheries, if you ain't going to eat them, put them back alive. If you have problems getting the hook out, cut the line as close to the mouth as possible and the hook will rust out in a short time. There is no need to kill a deeply hooked eel (or any fish). dazza
I was told by a local fisherman if you draw a cross on the ground and put the eel on it, it wont wriggle, he was finishing his 15th pint of Guiness at the time though
