We often catch big perch when trolling in Loch Lomond. To prepare for cooking- in our case frying on a twig fire- run a sharp boning knife along both sides of its backbone, then cut its throat ,take its head in your hand and gently pull back. The backbone and most of the other bones will pull away. A very tasty fish. Why it's not farmed and sold commercially is a mystery to me. I under stand perch was netted & sold during the war when it helped with food shortages it certainly is a decent fish too eat . Also if I remember from my years in Australia the same thing was done there with perch but they have a different name for it in Auz & they refer to them as Red fin .
