A pork chop stuffed with more pork is wonderous thing and should be tried if at all possible. I'm a big fan of brining chops so I give mine an hour or two in a brine of 1tbspn salt, 1tbspn black treacle and about a litre or so of water. Take a couple of very thick pork chops Brine for an hour or two Whilst they are brining get your stuffing ready (I use sausage meat and apricots to make a sweet stuffing) and put it into your stuffing device, in this case its a cleaned out silicon tube as per Big Al's After the brine, take a thin bladed knife, push it into the chop and move it around to create a decent sized pocket in the meat - try and keep the entry hole as small as possible, then take your stuffer and do the biz Quick application of your favourite rub or seasoning Now whats not to like about pork stuffed with pork It's worth a try - they are wonderful, the brine makes all the difference and is well worth the effort Quote Link to comment Share on other sites More sharing options...

Jonty Posted August 16, 2013 Author Report Share Posted August 16, 2013 In a roundabout way that's where I got the idea from Aris, an american mate of mine had told me he'd seen someone stuffing chops on DDD and that they looked very good.
