pin Posted April 18, 2007 Report Share Posted April 18, 2007 Pigeon is very much like a cheap cut of steak in terms of its make up. You can either flash fry it and it will stay moist (keep it done under mind) or you need to stew it for a long time to let the fibres in the meat break up and release or it will be incredibly tough. For use in game pie I would cook the pigeon separate for about 3 hours on a gentle simmer, no more, in plenty of liquid before adding it to pie ingredients.
