iano Posted March 12, 2017 Report Share Posted March 12, 2017 I'm a big fan of squid - cheap to buy and given that we live close to the sea, you can get fresh squid easily. My normal meal goes something along: Buy (or make) flat-bread / naan bread. Buy 1 medium squid for each person (I prefer to buy them whole and prepare myself). Clean the squid, make rings from the body and keep the tentacles Soak the squid(s) in lemon juice for 30 minutes. Basically put in enough to cover the squid, and leave this in the fridge When ready, stir fry ginger (matchsticked), chilli, garlice, shallots/red onions and lemongrass. Stir fry quickly, the aim here is al dente. toss in the squid and the lemon juice, then add a table spoon of vermouth and a tea spoon of caster sugar. Fry for less athn a minute. Serve.
