johnnytheboy Posted October 13, 2018 Report Share Posted October 13, 2018 If anyone is cautious or sceptical about eating geese this season I can really recommend marinating the meet, it gets rid of the muddy flavour. I have tried cider, brine and soy based marinades and they all work. The marinade takes on the muddy flavour so it’s a must to discard it and not cook with it. Last season I had some big Canada breast marinated in cider, stuffed in bramley apple sausage and wrapped in bacon, it was great! One was enough to feed the family. I done this with pinkfoots as well in the past and they were brilliant. I hope everyone that gets a goose tries this and isn’t put off by folk saying cook it with a house brick and chuck it out!
