There’s plenty of great videos on YouTube on how to bone the leg out - I learned by watch I one n]by Scott Rea. I 'butterfly all my lamb haunches and fill them with mixed herb stuffing and string them and then roast in the oven but will look to trying that in the future. The hock meat is to die for.
