vampire Posted August 24, 2020 Report Share Posted August 24, 2020 (edited) Cooked a big batch of apples and pears last year and then put in the freezer in portion size plastic bags,never ending supply and they made lovely tarts no problems. I freeze apples raw no problem but cook them straight from frozen, same with plums/damsons cooked straight from frozen or they go horrible brown colour. From frozen they are just like you used frsh fruit. I have so many I might just experiment and freeze some pear halves and do the same see what happens. Straight into boiling water and poached. Walker570 Posted August 25, 2020 Author Report Share Posted August 25, 2020 Well I halved and packed four packs this morning and they are in the freezer. These early pears have such fine skins, I just halved them and then used the melon baller to neatly remove the centres leaving all he ood stuff intact. I will leave them in the freezer for a good week and then have a pack out and straight into some boiling water to poach. I kept them flat in the bags when I drew the air out so that when they come out of the freezer they will easily be parted and not frozen in one big lump. If the poached ones turn out ok then the next pack i will try a tart. Shallow dish lined with pastry, lay the frozen pear on the pastry and pour on a jar of apricot preserve until the pears are covered and straight in a hot oven.
