Breast them. They taste like beef, sort of, but do need to be broiled and not flash fried! Think skirt steak (poor man's undercut as we used to call it) not best fillet! The wings are a real PITA to do and not worth the effort.

The best ones , ( all depends on what you would call best as they are far and few between ) are the goslings you would get in September , these would have been fed on the grain stubble fields and would be just about worth the effort of cooking them , the older ones are next to rubbish and you would have to be hard up , or just arrived on our tiny island in a rubber dingy with a outboard on the back to try and disguise them with different species to make them edible , and what you have to remember in shooting geese in September is they start to decomposing in the warm weather as soon as they are shot .

I have eaten cygnets in the 60s and they were far superior than Canada geese , now I don't think Wild Justice would allow you to ( remove ) a few  :lol:
