Chocolate Apple Cake

It's that time of the year when the garden delivers some lovely fruit.
I've already made a cherry and ground almond clafoutis and its plum variation as they came into season  - see my July 2022 post for that recipe.

Now it's the time for our Bramley apples.

My wife is gluten free and I have clocked up 61 years of T1 diabetes, so I adapted this from a Facebook recipe to cater for both of us.

2 medium Bramley cooking apples
4 eggs
70g cocoa powder
1 tsp gf baking powder
50g soft butter, plus a little to grease the baking tin
1/4 tsp vanilla extract or cinnamon as preferred
3 tsp fructose

Preheat your oven to 180°C.
Core and grate the apples, skin and all and microwave with 1 tsp fructose until they mush up (or stew them in a saucepan) and leave to cool.
Separate the eggs, whisking the whites to a soft peak.
Blend the softened butter with 2 tsp fructose then beat in the egg yolks until they are doubled in size and leave a trail and add the vanilla or cinnamon.
Stir in the sieved cocoa powder and baking powder and mix well.
Stir in the apples.
Fold in the egg whites, taking care to mix well but without losing the aeration
Pour into a buttered square cake tin and bake for 30 minutes, checking that it is cooked with a skewer.
The amount of fructose can be adjusted for individual taste.
