It Jamaican. You wrap the chicken with the bacon, and stick it in the oven. Now say it in a Jamaican accent. "BEER-CAN CHICKEN"

peter-peter
get a biscuit tin, stick a wire trivet in the bottom. sprinkle hickory dust (better than oak) under the trivet. put the chicken on the trivet and with lid on tin. put onto a source of heat a low barbeque etc. 40 mins or so done bootifull you'l never put one in the oven again. cooks sausage in 10 mins or trout in 8 mins. Beardo
can't help on the smoking part - but i've made Beer Can Chicken before... http://bbq.about.com/od/chicken/ss/aa072807a.htm you end up with a really juicy flavoursome bird (and the chicken ain't half bad)
henry d
I prefer to joint the chook into 4 and salt for 4-8hrs then wash off and dry thoroughly before smoking the pieces, I do mine on a very low flame for 40 mins.
