malkiserow
Well today is a slight modification on my standard loaf. In 24 minues the next loaf will be ready. Today I added 2 tablespoons of skimmed milk powder. Do you do this? To my basic loaf (half wholegrain half white) I add a hanfull of pumpkin and sunflower seeds. Some add vitamin C and reduce the sugar since yeast thrives on VitC, I've not tried this yet Edited April 30, 2009 by malkiserow
Ozzy Fudd
i find adding a couple of slices of bacon, a split pork sausage and a spoonful of beans to a slice of bread works wonders...
malkiserow
I think the milk powder made it a bit softer and slightly more elastic (less crumbs).
Ozzy Fudd
ok being serious for a mo ive seen people adding pumpkin seeds in the past but thought it was just for flavour or extra fibre, didnt know it did that

Some add vitamin C and reduce the sugar since yeast thrives on VitC, I've not tried this yet Honey works well Also try using sundried tomatoes 2/3 cup. Another thing is to crush 1tsp salt, a garlic clove and 1/2 sprig of rosemary leaves with a mortar and pestle and add a good glug of olive oil and let it marinade for a while then make some dough, then knock down and place in a tray about 1" thick and leave to rise again and when risen prod all over with your finger so the surface is pockmarked then slosh a load of the oil on it and bake. !!!!!!!!!
