henry d Posted May 14, 2009 Report Share Posted May 14, 2009 From the recent bunny sniping I chose a good buck for smoking, I jointed the legs and saddle and salted them for 8 hours in a mix of 1 part demarara sugar and 2 parts maldon salt. This was about 2 tablespoons worth, then the joints were washed and dried then left for an hour before smoking. 20 minutes under a low heat and then left until cool (about 3 hrs). Tasty stuff from a few test nibbles and I`m looking forward to lunch of legs with salad and I am going to try something italian with the saddle......watch this space. Axe, yes very mildly sweet and I am just stuffing my face with it sliced onto wholemeal bread that has been "buttered" with mayo and it is V. nice indeed !
