Perhaps a strong dish of spiced lentils, with the fish pieces steamed on top for the last 10 minutes? Girl Interrupted Eating has got the right idea HERE, and preserved lemons are a really good thing. I would be very tempted to stir in some smoked paprika and a little dried red chilli as well. Posted March 26, 2010 Report Share Posted March 26, 2010 I do a lot of cod fishing in the winter so i eat fresh cod nearly every week, and my fav way is to dip the fillet's in mayonnaise and coat in breadcrums then bake in the oven lovely. Axe Posted March 27, 2010 Report Share Posted March 27, 2010 A good beer batter with nigella seeds works well. For cod steaks I have enjoyed a JO recipe: Finely slice runner beans and lay in a roasting dish. Add finely chopped garlic, salt and pepper and a drizzle of olive oil and mix through. Lay cod steaks on top and cover with 2 or 3 strips of prosciutto. Sprinkle a handful of pine nits over the dish and a little more olive oil. Half lemon and place in the cavity of the cod steak. Loose foil over the top and bake 200c 15 mins, remove foil and bake further 5 mins. Simply transfer to a plate to serve. The spine and bones should lift easily from the cod in one piece. berties Posted March 29, 2010 Report Share Posted March 29, 2010 whats the tastiest batter mix for cod, and what other ways of cooking cod apart from deep frying please try a nice tempura,cold fizzy water corn flour you can add a egg to hold if you wish and add a little curry powder and salt to season ideal for the wheat allergy crowd you can cook cod alternatively by wrapping it in a air cured ham and cooking in the oven with a little olive oil and garlic/will not dry out so fast serve with a creamy mash and a homemade tomato sauce youll pay loads for this at a restaurant but it is easy,happy cooking Quote Link to comment Share on other sites More sharing options...

Beer batter is great and we had wonderful cod & chips - the cod coated in a tempura batter at Browns Restaurant in George Street Edinburgh three weeks ago - I can highly recommend the tempura batter as it is crisp and light and it looks as if a recipe for it is already there [thanks berties] - enjoy! Another tip - if you like tomato ketchup, Wilkin & Sons from Tiptree, Essex make a fabulous tomato sauce which is a million times better than Heinz or all those supermarket own label ketchups.
