Having an idle day indoors, much as I like to be out in the snow for recreation the new build I am working on had no attractions on a wet snow day like today. So! Racked off the cherry brandy from the kilner jar into a bottle. What was left was delicious alcahol soaked fruit just shouting to be made into something even more delicious. Simple a 200g bar of dark chocolate into a bowl over a pan of hot water until it was semi liquid. Tipped in the cherries gave them a stir and fished them out with a cocktail stick on to a plate which had been pre-chilled in the freezer. I should add that the cherries were pitted after removal from the brandy, giving them an hour in the freezer firmed them up for this operation. The result is beyond expectations the dark chocolate seems an ideal match for the fruit.

Ah, yes, that`s the business !

 

I made 2 litres of it this year as there was a glut of cherries and I intend to make some, I also think I will let the cherries drain a good bit as when I first tried it with sloes I thought they were a bit "wet".

 

Like the chilled plate idea, thanks for sharing :good:

Fill to half way a jar, with cherries. Fill to within an inch of the top with brandy, leave for a month or two and then strain off.

It will be bitter so add some sugar and stir to dissolve, taste it and if not sweet enough add more sugar and stir ...... keep going until you get a nice sweet tipple or you slide to the floor under the kitchen table :lol:
