henry d Posted March 16, 2006 Report Share Posted March 16, 2006 I`ve been mincing PIGEON CON CARNE Feeds 2 hungry B`s Finely mince 3 pigeon breasts(that`s 3 breasts not the breasts of 3 pigeons)and 3oz of belly pork(no rind) 1 small onion sliced 1-400gm can of chopped tomatoes 1-400gm can of kidney beans 125ml(half a bottle) of "Newmans own"sticky BBQ marinade(at ASDA) 1-tbsp tomato puree Chilli to taste. fry the onion and the mince until slightly coloured(try not to burn the onions) add the tinned tomatoes,puree,marinade and kidney beans cook for 5-10 mins then add the chilli(I prefer-Kitchen Magic west indian peppers,available at most delicatessens)a SMALL AMOUNT at a time. taste it after simmering(and I mean very slowly bubbling) for 35-40 minsand adjust the seasoning/chilli.
