It's only going to make them more aware that people are fishing and heighten their senses. Do as I did and just apply for a licence. You can select the body of water and they'll more than likely grant it. People legitimately ‘fishing’ (i.e., with rod licence and permits) who accidently catch crayfish are extremely unlikely to be prosecuted however, people ‘trapping’ with the intent of removing property is an entirely different matter. Incidentally, prosecutions and the upholding of the law is carried out by the officers of the Environment Agency and not the Lee Valley Regional Park Authority. You are correct in regards to the dilemma when anglers accidentally catch crayfish, however once again, if apprehended the EA officers would take this into consideration. Finally, in regard to eating crayfish these creatures have not been cleared for human consumption by either the Food Standards Agency or by Environmental Health, so therefore consumption is entirely at the captors discretion. Will they give a hoot? probably not, unless you're actually on a farmer's land or had to breach a fence to get there.
