Mrs P has been pickling home grown Cucumber sticks in vinigar and chillies for a while now, they have a a nice bit of heat and go well with cheese/port, we have also done red tomatoes in oil, and a green tomatoe chutney super with salad out of season and again to make good use of seasonal produce

 

anyone do anything else we would like to try more

How about pickling some walnuts? Lovely with cheese!

Handlebars wife is the one to speak to.

Vickie makes and sells Jams Chutneys and Pickles for Farmers Markets and very good they are too.

 

My favourite is her Piccalilli.

 

Her specials are Traffic Jam which is Red(strawberry) on top of Orange (peach) on top of Green (Kiwi). And Jubilee Jam, Red (Strawberry)White (Lychee) and Blue (Blueberry)

 

She is enjoying good sales on the Jubilee jam ahedad of the forthcoming event, I wil ask Handlebar (steen) topost up pictures

How about these? As BakerBoy said the missus sells her pickles etc at Farmers Markets and Delis around Beds, Herts & Bucks these two are proving very popular

What sort of smoker do you have pavman? Hot or cold?

very basic its a stainless over pot with a lid, i have a trivet in the bottom and put shavings under that and the food ontop and them put it on my camping gas stove it works but i think a longer cold smoke would be better

There's nothing wrong with basic mate, if it ain't broke don't fix it I reckon.

 

If you want a cold smoke, you can't go far wrong with one of these Cold Smoke Generator they're the best invention for smoking I've seen in years. You fill it with wood dust, get it smouledrring with a t light and then let it smoulder - the box says approx 9 hours but I regularly get over 15 hours from 100g of saw dust. It doesn't produce any heat so you can use virtually anything as the smoke box, even a cardboard box if you wanted.

 

I use a food grade oil drum (£8.00) with a couple of vents in the sides, you can see the smoke generator in action here

Definately the best £30 I've spent on smoking stuff ever.
