Trying a WOW wine

Got my first batch of wine on the go...well actually only 3 gallons

Found it on the home brew forum and its called a WOW wine...

 

WOW WINE

To make 1 gallon:

1 litre White Grape Juice

1 litre Orange Juice, no bits, budget brands are fine

around 800g Sugar

1 tsp Pectolase - see below

Tannin - see below

1 tsp Glycerine (optional)

Yeast & Nutrient - see below

Later on you will need Campden tablets and (unless you want a dry wine) Potassium Sorbate or “Wine Stabiliser”.

Glycerine is optional but can improve ‘mouth feel’ of the finished wine. Used at 5ml to the gallon, these little bottles from the supermarket home baking aisle at around 70p are good for 7-8 brews. It works out much cheaper to buy a bigger bottle from the Chemist’s if you’re using it on a regular basis. I find a range of syringes can be useful and you can buy those on ebay.

 

METHOD

 

Heat in a saucepan with about a pint / 500ml of water. It doesn’t need to reach boiling point. If fermenting in plastic, allow to cool a bit. If fermenting in glass, DJs really don't like thermal shock, allow the syrup to cool a lot.

 

Pour your juices into the DJ or PET.

 

Add your sugar syrup, glycerine and tea then add some cold water but DO NOT FILL. With a PET it’s usually safe to fill to this level, with a glass DJ it should be to the bottom of the shoulder

 

Put your (well washed) hand over the neck of the jar and give it a damned good shake to mix everything up and to get some air into the must.

 

Check the temperature. If it’s around 25°C (give or take a bit), add your yeast, nutrient and pectolase. Cover and shake it again.

 

If you’ve got a hydrometer you may wish to take an OG or Original Gravity reading, although that’s not a lot of use unless you’ve calibrated your jar beforehand and know what volume you’ve got.

 

Campden tablets guard against infection and oxidation, and you should use one per gallon whenever you rack your wine. Crush it to a powder between two teaspoons. This will now also stun any remaining yeasties. There will always be a few stubborn individuals who don’t know when they’ve had enough, just lurking in the shadows in case anyone should throw a bit more sugar their way, so Potassium Sorbate or ‘Wine Stabiliser’ makes sure they can’t reproduce

 

Let it settle for a day then transfer into a new demijohn with a camden tablet it

 

Put your (washed) hand over the neck of the jar and give the jar a gentle shake, ease your palm away and the wine will fizz. Cover again and give it a harder shake, release the fizz.

 

let it settle and clear then into bottles and enjoy

They call it WOW wine because you take one sip and say WOW thats **** :lol:

 

PS did you pick me something up on you travels too.

 

I have actually but since you are so busy working or fishing/shooting without me then it might be ready when I do see ya

Nice stuff!

 

Another one I like doing is quite simply 4 cartons of apple/elderflower juice in a demijon and bang in some wine yeast, your never gonna win any awards with it but if left long enough it ends up pretty good and clear after a few racks http://forums.pigeonwatch.co.uk/forums/public/style_emoticons/#EMO_DIR#/good.gif

I use kwik clear in them

Does the job in 3/4 days
