I've tried the polish goose recipe on here and was wondering if there was any other suggestions? I've been putting them through a mincer recently but Im already sick of spag bol Anyone tried making burgers with the meat or anything different? big bad lindz Posted December 3, 2013 Report Share Posted December 3, 2013 I use goose when minced as I would with any type of mince, cooked with a little onion & carrot and maybe a bit of stock, cooked with spices as a type of curried mince or use a pre made jar of curry sauce meat balls, spag bol, burgers, lasagne, chili, sausage rolls etc etc. Although goose can sometimes be a bit tough, when minced it makes it a lot easer to braise . I sometimes put in a little minced pork or sausage meat just to give a little more moisture. There is a great Jamie Oliver recipe for a minced wellington that I often use and looks good on the table and tastes great when entertaining and no one will know that you have not used beef mince. I'll definately try and look out that minced wellington recipe what is goose mince like, sounds interesting. You would just think it was normal mince. fandango Posted December 3, 2013 Report Share Posted December 3, 2013 Agree with BBL on the mince,, you can make anything that can be made from mince out of it,,,, I do like a whole bird though, and the best way I have found is to boil the bird first, for approx 1/2 to 3/4 of a hour,, have a few bay leaves and whole black peppers in the water,,, boil the bird hard for this time, then take out and let it cool for 1/2 a hour then stuff it with whatever you like,,, onions, apples some thing that will keep it moist,,, sausage meat can be used in the same way a turkey neck is stuffed,,, give it a good sprinkling of black crushed pepper and roast under foil for 2 hours,,,,,, oh put some of the water you boiled it in,, in the roasting pan,,,,, I have never had a tough goose when it's cooked this way and they almost come out like a giant crispy duck Made me own mouth water,,,, roast goose tomorow I think ?
