My little girl has been wanting me to show her how to tap a tree for a while now so I'm keen to take her whilst she's showing some interest. I don't use that method and keep the would fully sealed at all times. I've not seen any dieback from fungal attack but will check some old trees I did years ago. I use a pipe which is slightly smaller than the borehole and insulation tape would around the pipe to make a round wedge which seals it up. The sealed container has the pipe running into the top and the whole container sits on the floor. It could be argued that birch is a weed tree but let's not go there.
