Big Dog
Hi guys. I shot a rabbit on Friday night out lamping. It lay in the boot of the car until about 1400hrs Saturday. I then skinned and cleaned it out. I cover it in tin foil and put it in the fridge until 2200hrs last night (Tuesday) so that is Friday to Tuesday about 4 dayS. I put it in the freezer last night, it was a bit smelly but the meat look pink and firm. Do you think this is still OK to eat or should I bin it??? Its the lying in the car bit that concerns me PS.. How do you guys process bummies??? Do you skin and clean and freeze right away or do you let them stay in the fridge for a while. It is better for the meat to hang over a bit like red meat or venison??
pavman
Personally I would not, if it smells off it probably is off, so best not take a chance BD, I clean and cut the meat off same day, then either cook or freeze, we like burgers, bunny meat mixed with pork. or better still marinade bunny in honey and chilli in fridge for 24 hours then fry with leeks and serve with mustard mash spuds, yum yum

Country_est
I gut within 5 mins of shooting and can hang for 3 days, but mainly in the fezzie season (so a lot colder). If it wasnt gutted before left in the car I woulndnt toch it at all. It it was warm where you were on Sat then I still woulnt touch it. roadkill
so is it best to gut them straight away whilst out in the fields
pin
Paunch them as soon as possible or before you leave in any case. Into the fridge with them and skin as soon as you can, couple of days on the fur won't hurt.
Oly
if it smells off it probably is off If you trust your senses (inparticular smell) when it comes to food and determining whether or not it's off or not you generally won't go far wrong...we have it inbuilt in our bodies since caveman type times! Highlander
I put it in the freezer last night, it was a bit smelly but the meat look pink and firm. Rabbits always smell. Your nose should tell you if it's off or not as oppossed to just it's normal odour. Assuming it's not green and rank then it's most likely OK to eat. We tend to turn our noses up at anything that doesn't have a 'sell by' date on it these days but I can remember when venison (especially red deer) was buried for a week or so to 'tenderise' the meat and still some people prefer game to be hung until it's dripping. Comes down to personal taste I guess.
