We have one of these chicken roasting clay pots.

 

You soak the pot in water for several hours, then put the chicken in, stuffed with a whole lemon or onion, a splash of wine, a little garlic, a few herbs, salt & pepper and into the oven at 150C for a few hours.

 

The meat just falls off the bone

You should look up some of Jamie Olivers recipe's, he has quite a few.

 

We like the following:

 

Chop prociutto and mix with 1 bunch of thyme, grated rind of 1 lemon, garlic cove crushed and half a pack of butter, mix well. Carefully feed your fingers under the breast skin to separate and stuff with the mixture. Cut remainging lemon in half and place in cavity with another sprig of thyme and several crushed cloves of garlic. Roast as normal, rest, carve and serve with your choice of veg and new potatoes. If you want to jazz it up, reduce cooking liquor with a glass of white wine and mix with a rue to thicken and use as your gravy or if your feeling really posh, jus!

"Beer can Chicken"

 

Get a can of beer discard half(i think it means drink half), stand it up, place the chicken over the top(sitting on the can) and roast untill ready.

 

Have not tried this one yet am waiting for some better weather to try out on the gas bbq, sounds like a good summer meal, if not a bit of a waste of beer :good:
