hendersons Posted July 9, 2009 Report Share Posted July 9, 2009 sorry holly haven't looked in for a few days the recipe is fairly easy but i have no exact quantities have to adjust a bit until it tastes right with a bit of luck i will make some later in the week at work and then can be more exact. fry a couple of diced onions with 3 cloves of garlic and some salt and pepper, add 6 diced courgettes and fry for another couple of minutes, then add half milk and half water until it has a good covering (an inch or so is normally about right), bring to the boil add some mint about 30 leaves but please adjust to taste, simmer and then once the courgettes are tender blend and seive put in the fridge, once chilled serve in a bowl with a bit of creme fraiche on top and a little chopped mint (or something equally poncey) give me a few minutes and i will have a look for a few more courgette recipes in my old files from work and then post them up. nick Quote Link to comment Share on other sites More sharing options...

So have tried this recipie below tastes great and is a welcome change from the norm (Fried / Grilled) INGREDIENTS * 3 eggs * 235 ml vegetable oil * 400 g white sugar * 225 g grated zucchini * 10 ml vanilla extract * 375 g all-purpose flour * 7 g ground cinnamon * 5 g baking soda * 1 g baking powder * 6 g salt * 60 g chopped walnuts * add to recipe box Add to Recipe Box My folders: * add to shopping list Add to Shopping List * Customize Recipe * add a personal note Add a Personal Note DIRECTIONS 1. Preheat oven to 325 degrees F ( 165 degrees C). Grease and flour two 8x4 inch loaf pans. 2. In a large bowl, beat eggs until light and frothy. Mix in oil and sugar. Stir in zucchini and vanilla. Combine flour, cinnamon, soda, baking powder, salt and nuts; stir into the egg mixture. Divide batter into prepared pans. 3. Bake for 60 to 70 minutes, or until done.
