It takes about 7 hours to cook a decent sized pig on a hog roast spit to crispy, succulent perfection, (oh great now I'm hungry again) so gotta keep the punters happy in the meantime. I have a Hog roast planned for my 40th next year (deer too if I can get one) and have arranged a band and bar too, plus silly games like 'splat the rat' etc... grouse2008 Posted September 28, 2009 Report Share Posted September 28, 2009 Buy a thermal probe to ensure that the meat at the centre of the pig is cooked, google "Food Standards" and you will get the required temperatures (Im too fat and full of wine to look it up for you). Used to do catering at shows etc and have been ill after sampling some hog roast where the meat was not cooked properly. Last thing you want is all your guest getting the ****s! Or get some cheap beer and blame it all on that!!! Probes arent that dear- £20- £30 on fleabay but get the ones with a probe so you can check core temp.
