deer cold store

I had to hang mine in a cool out buildfing for 2 days, left the skin on and a mozzie net over. Once skinned, the butchering was tricky as the meat was quite loose and much paler and wetter feeling too. Is this perhaps because it hasdnthung for long enough to 'set'? Any thoughts? - I'll be looking to find a cold store, or at least get the odd access to one.
