ferguson_tom Posted November 23, 2011 Report Share Posted November 23, 2011 Hi I bought a duck yesterday for sunday roast after looking online im now worried there is not enough meat. It is about 2.5kg would this be enough for four adults with veg or should i get another bird or joint to go with it. This is my first time cooking duck so has anyone got any suggestions how to make it a good sunday roast? Also if it is too small what other meats go well with duck? Fatcatsplat Posted November 23, 2011 Report Share Posted November 23, 2011 Assuming it's dressed, that's a 5 lb duck, which should feed probably 6 people (with the weight of the carcass, shrinkage etc) - Most of the meat is in the breast, but it's worth carving out all over. Plus if you're having it as a roast, there will be spuds and veg to fill the plate. Rub salt and pepper all round the skin and then brown it off on top of the stove, then stick it in the oven on a grill rack inside the roasting tin as there is a lot of fat in the skin (Retain the fat for your roasties)and give it around 2 hours in the oven. Towards the end of cooking, i'd pour a little honey over the skin - Just gives it a nice finish. Enjoy Quote Link to comment Share on other sites More sharing options...

Thanks for the info, i will definitely use the fat for the potatoes that will be very nice. So best thing then out of packet, bit of salt and pepper and on a grill rack to collect the fat and bit of honey at the end? Sounds nice a simply and hopefully very tasty.
