Much better with smoked bacon and no paper case, just wrap bacon around muffin tin and cook until crispy then add the egg and cook untill the egg is how you like it. The crispy bacon holds the shape when removed from tin

As a bit of a variation on the theme I've done quail egg scotch eggs I the past but instead of the usual sausage meat I've made a similar sort of thing out of smoked salmon trimmings

I've had caiman eggs in the scotchies bloody lovely,my mate made them got the eggs from the Chinese market :) :) :)
