ElvisThePelvis Posted July 18, 2016 Report Share Posted July 18, 2016 I have been curing a prosciutto in the garage which has got warmer than I would have liked,when I checked the muslin bag it showed green mold on the outside, when I replaced the bag it has a lot of green blue mold and some 'fur' growing. Stonepark Posted July 18, 2016 Report Share Posted July 18, 2016 Mould on ham is not fatal, but indicates atmosphere isn't dry enough, a dehumidifier for a few days in the same space where it is hanging would be ideal. I normally hang mine in an old airing cupboard with a mini dehumidifier in bottom, so it gets heat from hot water tank and dried by dehumidifier. Fatcatsplat Posted July 19, 2016 Report Share Posted July 19, 2016 As far as I'm aware, it's a bit like a hung steak and this is kinda meant to happen if left alone at the wrong temperature - Cut away the horrible bits and the bit inside should be lovely - Use your nose on it and try to eat a little (or give some to the neighbours screaming kids).
