marsh man
Very nice , I only wish my teeth were good enough to do the crackling justice , as for belly pork , I find the cheap basic pieces from M+S or Waitrose are not that good and don't look very appetizing , that would be more down to my cooking than the piece of belly pork , I sometimes get a small piece that have had all the salts and peppers rubbed in and they look and taste fine . And the same goes for Tesco’s. The skin on the joints looks insipid and immature. Almost as if the pig had only just left its mother. We use a local butcher which is where this piece came from. The joint looks completely different to supermarkets. The skin is dark and firm and mature. Yes, a little dearer, but certainly a better and more enjoyable piece of meat.

That's the way to go 👍 I buy meat from a farm's shop or village independent butcher whenever I can,,,, the extra expense is definitely worth it 😃 Failing that, Waitrose butchers counter is usually quite reliable 🙂
