I remember Mother buying udder from Sheffield Castlegate market and frying slices of it as a breakfast treat.

I did and do turn my nose up at tripe, though, even à la mode de Caen and as for andouillettes 🤮

Castlegate market, all gone now, but more butchers than you could shake a stick at in it's heyday.

I don't mind kidneys, liver and black pudding, but tripe, cow heel, udder and chitterlings which were a favourite of parents and grandparents are not on the menu for me.
