new to the flock
I have roughly 5 weeks until tapping time. Will be looking at making some walnut syrup this year as well as the maple syrup. It will be my first time for the walnut syrup so should be interesting. Just wondering if anyone else will be tapping this year, as I expect you are at that time in parts of the UK now. NTTF

henry d
Can you make Birch syrup as Maple and Walnut are fairly scarce here ??
new to the flock
Yes H you can but it takes an incredable amount of sap. Birch wine on the other hand is another way to enjoy the birch tree. A very nice white wine. NTTF

WeihrauchPower
I'm jealous, I've just bought some good ol' Canadian Maple syrup for my pancakes this evening. I can't get enough of the stuff! Pancakes bacon and sausages swimming in the stuff! Really good for your teeth.
Highlander
Birch sap can be tapped but try to pick a big old tree as it'll run freer and faster. Sometimes you'll find one that's 'bleeding' all on it's own and all you'd need is a bucket, oh and some muslin or similar cloth to strain out the bits!
