pavman
its Mrs P's birthday Friday and I am looking to cook up a nice meal for her whilst she languishes in the bath with a glass of wine! I have venison, goose, duck, fezant and rabbit in the freezer along with season veggie in the garden, spuds, beans, leaks, marrow and am looking to offer at least 4 courses Any ideas of something a little off the beaten track would be appreciated, I am no stranger to the kitchen and would like to make an effort beyond the traditional if I can, show her how much I appreciate her putting up with me your suggestions (for a course) welcome

rimfire4969
I will add things as i think of them, Rabbit Tarrine, Three Bird Roast (The biggest bird Goose stuffed with the Phesant which is stuffed with the Duck) with Seasonal Veg Pink venison served on top of Babbage and bacon fry the bacon pieces until crisy and then fry the cabbage in with the bacon, you may have to boil the cabbage for a min or two first. henry d
Marrow stuffed with minced goose and leeks Mince(you`ll be good at that) the goose, thighs would be good, and add some minced fatty bacon, fry with some chopped shallots and your fave herbs and after 5 minutes add the chopped leeks. Half lengthwise and scoop out the middle of the marrow and add the mince, de-glaze the pan with some red wine and add to the mince. You can then either, put the 2 halves of each marrow back together or just cover with foil and roast in the oven. I prefer the foil method but I add a grating of cheese over the mince first

rimfire4969
Boil the cabbage for about 1 min in salted water, cool it down quick in cold water. Fry some good bacon cut into bits until crispy, then add the drained cabbage to the frying pan and fry until hot, add salt and pepper to taste. carefull with the salt the bacon may be salty enough.
