liamp79
Right guys, The wife has come back in from the garden with an absolute bucketful of beetroot. Any ideas on anything other than pickling and jarring it all up? Never had this much and want to try something differnet with it! Any good old recipes, nothing too weird though! Kes
Have just had a meal of local beef burgers on home made baps with home grown onions and thinly sliced boiled beetroot - rather nice. Personal favourite is boil (simmer) for about 15mins till exterior skin peels off when touched. Remove skin, thinly slice and (cold) use 1/2 inch slices on Half inch slices of mature cheddar, sandwiched between 2 thickish slices of local or home made bread - called a 'jehovas witness' in north staff hunting parlance. A favourite also of my long dead grandad who I used to hunt with (50 years ago). Alternatlvey slice thinly after boiling and place in vinegar. A super alternative to pickled red cabbage with hot pot. Very good blitzed in soups (after removing skin) with chicken and cabbage, spiced with chillies. We eat most just bioled and cool sliced or diced with salads. It is said to 'clean the blood' - you cant get too much of this super veg. Good eating.

lord_seagrave
Peel and juice it and use it instead of tomato juice in a Bloody Mary. Add a little fresh grated ginger and a good twist of black pepper. Dee-lish. LS
hendersons
Take as many as you can get your hands on rub them with salt and lots of garlic (don't worry about peeling them) I find this takes away the smell of the beetroot. Then take a large black bag and deposit the whole lot in there. Then remove to your neighbours bin just incase the garlic hasn't taken away all that disgusting smell. On a mOrd serious note try baking them then give them a peel mix with horseradish sauce and creme Fraiche and serve with sOme grilled mackerel or a nce bit of roast beef Nick P.s. Beetroot is only for gayers and people without taste buds

henry d
Get some carrots, parsnips and Jerusalem artichokes to go with them and thinly slice, a mandolin is good, and make crisps with them
Beardo
i'm partial to Beetroot Gin and Tonics - just add an equal measure of beetroot juice to the gin - lovely flavour and colour!
