bisondan
I like my hot food so bought some Dorset Nagas online a couple of years a go. Chopped one up and put it on a pizza, the heat was just about bearable but it made me feel light-headed and dizzy, so I won't be touching anything that hot again. Fatcatsplat
I was given a couple of Trinidad Scorpions last week - Wow, ouch, ooh oooh ooh, flippin' eck and crikey do not do them justice - Tastier than Naga, but a lot fiercer. I'm cooking with one and drying the other
Thunderbird
Come to this topic a bit late but PM Brown Sauce. He's made some gorgeous naga jam. It's amazing.
Salizar
I did this with Scotch Bonnets. Also a lovely tasting chille. I just used white vinegar, de-seesed chilles, and salt. Liquidised it, and let it mature for a few weeks. I then filtered it, and put it in a tabasco bottle for dosing (Yes, I changed the label lest someone make a mistake!). Though it should keep outside the fridge with all that vinegar, I keep it in the fridge and it has not lost its aroma, or potency. The Scotch Bonnets are pretty darn hot, I looked after a couple of cats for a friend of a while back, she grows peppers in her conservatory, she said help yourself to some peppers if you like, I did and touched a bit of the pepper on my tongue, it felt like my mouth was on fire, so test before you use as they are lethal. ROY
I did Naga chillie the other day 1 whole dried naga for 3 portions Very Very Hot just the way i like it. After eating so many Nagas and super hot chillies and curries i dont find em unbearable but do find the milder chillies a bit unsatisfying now. I always dry any chillis i cant use quickly i thread a large needle with some cotton and push the needle through the base of the stalk and hang them in the kitchen. Catweazle
I made chilli vodka yesterday, simply sliced up five of my lovely lemon drop chilis and put them in a litre bottle of cheap vodka. I have never tasted such a hot drink in my life, the alcohol must leech the flavours from the chillis almost instantly, one tiny sip swilled around the mouth gives a terrific glow. I can't wait until tonight to try it again.

Lord Geordie
I remember a few instances of Chilli Chilling terror! First was my virgin experience of working with chilli peppers. I was making home mode pizza with a kick. A friend of mine grown chilli's so dropped off a small paper bag stuffed full of the I made up the pizza base and set it to one side to rise, while I prepped the tomato sauce and chipped the toppings. Well I got everything sorted and made up the pizzas. Topped with lavish helpings of Chilli and Cheese. Popped them in the oven and thought to myself! I have time to nip to the bog. Bejeezus I.was a cripple for hours. Without gloves nor washing my hands after handling the chopped chilli's My Johnson was about to drop off. I mean screaming man hot. I had it in a cup of milk to try and cool it down when SWMBO came in from work to see me with my Johnson in a cup of milk screaming! Well her merry little triad gave way to roars of laughter when I eventually explained what had transpired! Now I wear gloves when working with them little *******. She still has a plastic cup in the Cupboard on stand by The second incident was not as funny. I was making a Chilli con Carne for Me and my Dad. I went to buy some ingredients, Mum had already bought the chilli's. I came back from the shops to find a small pack with 5 shriveled chilli's in it. I though she was having a laugh! So in my infinite wisdom I chopped them ALL and tossed them in thinking there wasn't a lot. I finished cooking the con carne And left it to rest in the fridge over night, Off I trott to my gaff looking forward to trying the con carne with my old man tomorrow! At 2am I get a phone call that Dad has been taken into hospital  Turns out they though he was having a heart attack. He was in a lot of pain with burn and it brought on an angina attack. He had gone down to the kitchen for a cheeky spoon full of the mix, Not only did he end up cursing me for the pain of EATING it, but the secondary pain in passing it too I am now banned from cooking with Chilli :( Edited December 7, 2013 by Lord Geordie
