Rabbit and Leek Sausages the first to be put together with my Lidl special mincer I tried a few of them ot at a mate's BBQ very nice just need to get the hang of getting them the same size and tieing them up to hang had no idea as it shows Not bad for my first go I thought. njc110381 Posted September 14, 2007 Report Share Posted September 14, 2007 It looks like you've done a pretty good job of those, certainly no more untidy than my local butcher :blink: Why do they have to be exactly the same size? I find it good to vary them slightly so people can adjust portion sizes by swapping them around. This post has reminded me that I bought a sausage machine some time ago, I really should get it out and try to make something nice. I'm hoping that once I get the HMR I should have a really good supply of bunnies coming in, and although it's a little wasteful I'll probably just hack off the big chunks of meat and sling the rest if I shoot too many. Just do a line of three then fold them back on themselves,twist and then reapeat to create the classic butchers line! I may add i've never done them myself! But i've undone a few thousand! I already mine most of my rabbit, as it fries well, and takes very good. Im always amazed how much meat one minced bunny gives.
